Civerium ostrearum

Civerium ostrearum (Francogallice civet d'huîtres, Anglice oysters in cyvee) est ferculum generis civeti quod in Anglia Franciaque saeculis XIII XIV XV saepe paratum est. Ostreae in aquam bullantem intinguntur, lavantur, oleo breviter friguntur; salsa e micis panis tosti, iusculo calido, vino, cinnamo, gingibere, gariofilo, granis paradisi, safrano, aceto, cepis componitur et coquitur; quidam ostreas in hac salsa coquuntur, alii salsam coctam in ostreas infunduntur et statim inferuntur.[1]
